Ah, Green Bean Casseroles – the telltale symbol of the holiday season. We’ve whipped up a delicious vegan version of this classic dish that features fresh green beans, dairy-free alternatives, and – of course – CHi plant-based pork so you can enjoy the added protein … and the added flavor!
Ready in 60 mins (20 min prep, 40 min cook)
Serves 8
Ingredients:
- 1 package CHi Foods Original Ground Pork
- 2 lbs. fresh green beans, ends trimmed and beans cut in half
- 2 tbsp. vegan butter
- 1/2 cup yellow onion, diced
- 1/2 cup panko crumbs
- 1/2 cup nutritional yeast
- 8 oz. baby bella mushrooms, wiped clean and sliced
- 2 tsp. garlic, minced
- 1/2 cup plain unsweetened almond milk
- 1/2 - 3/4 cup vegetable broth
- 2 tbsp. cornstarch
- Salt and pepper to taste
STEP 1 Preheat the oven to 375F degrees. In a large bowl prepare an ice bath and set aside.
STEP 2 Heat a large pot of water over high heat until it starts to boil. Add the green beans to the pot and cook for 3 minutes. Strain the beans and add them to the ice bath and stir them until cooled. Strain the beans again and place them in a large casserole dish.
STEP 3 In a large pan, cook ground pork according to the package. Once cooked, transfer to a bowl.
STEP 4 Return the pan to the stove over medium heat and add 1 tbsp. butter until melted. Add the onions and cook for 2 minutes. Stir in bread crumbs and cook for 2 more minutes until bread crumbs turn light brown. Transfer onions and breadcrumbs to the pork. Sprinkle in nutritional yeast and mix well. Set topping aside.
STEP 5 Return the pan to the stove over medium heat and add the remaining tbsp. of butter. Once melted, add sliced mushrooms. Sauté mushrooms for 8 minutes until brown, stirring occasionally. Add in garlic and cook for an additional 2 minutes.
STEP 6 Pour the milk into the pan and bring to a simmer. Whisk the cornstarch with the broth and add on top of the mushrooms, make sure to stir frequently until the mixture begins to thicken. (If you feel the mixture is too thick add in a tbsp. of broth, until desired thickness occurs.) Add salt and pepper to taste.
STEP 7 Remove from heat and pour the mushroom mixture on top of the green beans and mix until combined. Sprinkle the panko topping down the middle of the green beans. Place in the oven and bake for 20 minutes.
STEP 8 Remove from the oven and enjoy warm!
